What full canvas means
There is a hand-shaped skeleton inside a good jacket. You can feel it in ten seconds.
A fully canvassed jacket has a layer of stiffened cloth running from shoulder to hem inside the front, attached by stitching rather than glue. It shapes the chest, lets the cloth drape, moulds to the wearer over time, and can be altered. Half canvas does the same for the chest only. Fusing glues an interlining to the cloth and does none of it.

How to check
Pinch the front of the jacket between finger and thumb, below the buttonhole and away from the pocket, and try to separate the outer cloth from the lining. If you can feel a third loose layer sliding between them, there is a floating canvas. If it feels like one stiff board, it is fused.
Do it low on the front as well as at the chest: a half-canvassed jacket passes at the chest and fails lower down. And look at the lapel: a soft roll means a shaped canvas; a sharp pressed crease usually means there is not one.
Whether it matters to you
For a jacket you will wear weekly and keep for a decade, yes: it will mould to you, survive pressing, and be alterable when your shape changes.
For a jacket you will wear twice a year for five years, much less. And a well-cut fused jacket that fits is a better garment than a canvassed one that does not. Construction is a tiebreaker between garments that both fit, not a substitute for fit.
