Schoenmakers
Makers of proper leather shoes: welted, so the sole can be replaced and the shoes last for decades. Some sell ready-made, some make to order, and a few make fully bespoke shoes on a wooden last carved for your foot. Why these? They are the names the trade measures itself against, and each has published enough about how and where it makes shoes for us to say something useful.
